Almost nothing smells like Thanksgiving far more than mom’s sweet potatoes baking in the oven.
The dish is so good it could practically double as a dessert.
Mom’s sweet potato bake
3 cups chilly mashed sweet potatoes (organized with no milk or butter)
1 cup sugar
3 massive eggs
1/2 cup 2% milk
1/4 cup butter, softened
1 teaspoon salt
1 teaspoon vanilla extract
1/2 cup packed brown sugar
1/2 cup chopped pecans
1/4 cup all-purpose flour
2 tablespoons chilly butter
In a substantial bowl, beat the sweet potatoes, sugar, eggs, milk, butter, salt and vanilla until finally sleek. Transfer to a greased 2-quart baking dish.
In a small bowl, blend the brown sugar, pecans and flour lower in butter until crumbly. Sprinkle above potato mixture.
Bake, uncovered, at 325 levels for 45 to 50 minutes or until finally a thermometer reads 160 degrees. Yields 8 servings.
