Sugar Free Keto Magic Bars (Nut Free, Gluten Free)

Keto Magic Bars are easy to make using a homemade sugar free sweetened condensed milk and can be easily adapted to your favorite fillings! These keto magic bars are actually nut free using seeds instead of pecans. The seeds and coconut provide just the right amount of crunch and chew!

Traditional magic bars usually have a graham cracker crust with a mix of chocolate chips, coconut, butterscotch, nuts and sweetened condensed milk. These are sometimes referred to as 7-layer magic bars. A simple recipe but unfortunately full of sugar and carbs. If you’re on a keto diet or low carb, sugar free diet, this high carb dessert won’t be on your holiday dessert baking list. Make my low carb, keto magic bars this holiday season, and you won’t feel the least bit deprived!

You start with an easy low carb coconut shortbread crust mixed with softened butter. It’s a nice thin first layer so that the real magic comes from the middle layer of the bars. Once the crust is baked for just a few minutes, you simply mix the second layer ingredients together in a bowl and layer it over the partially baked crust. If you haven’t prepared the sugar free sweetened condensed milk, the recipe itself won’t take more than 15 minutes to put together. Once done, pour it over the second layer and bake until bubbling hot and the edges are browned. Allow to cool for 15 minutes then place in the fridge to set before slicing. 

Super simple to make traditional magic bars nut free. Instead of the typical chopped pecans, I opted for a combination of sunflower seeds and pumpkin seeds, chopped only slightly to still provide a little bite and crunch. You can certainly swap with any nuts if you don’t have nut allergies in your family like in mine. 

This is the most luscious, creamy and easy sugar free sweetened condensed milk you will ever try! Do not attempt this recipe using any granular low carb sweetener, you will have a grainy texture! This literally takes just about 15 minutes to come together so either make it ahead of the this recipe or while the crust is partially baking. If you do make it the day before you make these keto magic bars, be sure to refrigerate then reheat for about 30 seconds in the microwave. Stir vigorously to combine and use as needed.

  1. Preheat your oven to 350 degrees F. Grease or line an 8 by 8 metal pan with parchment paper.

  2. Combine the first layer ingredients together in a bowl and mix well. Pour into the pan and spread using a greased spoon to flatten layer evenly. Bake for 5-10 minutes or until edges are lightly browned. Make the sweetened condensed milk recipe if you haven’t already.

  3. Place the second layer ingredients together in a bowl and mix to combine. Once the crust layer is out of the oven, spread this second layer over the crust.

  4. Pour the sweetened condensed milk over the second layer and bake for 25-30 minutes or until nicely browned and bubbling. Allow to cool then place in the fridge for 30 minutes to set before slicing.
